Savoury Oats w. Shiitake & Scallops

Ingredients:

  • 1 cup steel-cut oats

  • 1 cup bone broth of choice (I use beef)

  • 1 tbsp anchovy sauce (or fish sauce)

  • 6-8 large sea scallops

  • 1 cup dried shiitake mushrooms

  • 3 eggs

  • Salt and pepper to taste

Optional garnishes

  • Kimchi

  • Chopped cilantro or spring onion

Instructions:

Soak the oats & shiitake the night before! They need at least 3-4 hours of soaking for this recipe to be good. I soak them individually in approximately 3 cups of water in a bowl for each ingredient. I also like to boil the eggs the night before to save time in the morning (but this is of course entirely optional).

  1. Prepare the Oats:

    • In a medium saucepan, heat the oats w its soaking liquids.

    • Add to the oats the shiitake soaking liquids as well as the bone broth.

    • Dice the shiitake and bring the oats to a small simmer for about 4-5 minutes, stirring ocassionally. Cook until the oats have reached the desired consistency.

    • Add in the scallops and cook for 3 minutes, until tender.

  2. Assemble the Dish:

    • Add the savoury oats to a bowl.

    • Top each bowl with the hardboiled egg, sliced in half as well as other desired garnishes such as chopped cilantro, spring onion or kimchi.
