Lotus Root Recipe𑁍
Not only a delicious snack/treat, but also an incredibly beautiful and nutritious dish to serve with many TCM benefits
A fragrant and nourishing dessert/snack with TCM-inspired ingredients, that is especially great for lung health during the colder weathers (Look at the lung-like shape! :))
🍲 Instructions:
1. Prep the Lotus Root
Peel the lotus root.
Cut off one end (about 1 inch) to create a "lid" — save this piece.
Use a chopstick to gently clear out any debris inside the holes.
2. Prepare Filling
Drain soaked glutinous rice, purple rice, and goji berries.
Mix them together in a bowl.
3. Stuff the Lotus Root
Using a chopstick or the back of a spoon handle, push the rice mixture into the holes of the lotus root.
Fill firmly, but don’t pack too tight — rice will expand while cooking.
Replace the cut "lid" of the lotus root and secure with toothpicks or tie with kitchen twine.
4. Simmer
Place stuffed root in a pot and cover with water (about 1 inch above).
Add rock sugar to the pot.
Bring to a boil, then lower to a gentle simmer.
Cook for 1.5 to 2 hours, or until the lotus root is tender and the rice inside is fully cooked.
5. Cool and Slice
Let cool slightly.
Slice crosswise to reveal the beautiful rice pattern inside the lotus root.
6. Serve
Can be served warm, room temperature, or chilled.
Optional: Drizzle with osmanthus syrup or a light honey glaze before serving.
Lotus root TCM benefits: Warms the middle burner, strengthens spleen and stomach, promotes digestion, and nourishes blood. This recipe is especially great for lung health, as it helps dissolve mucus and improves flu, acting as a decongestant.
Great for also treating diarrhea, poor appetite, restlessness, and dryness due to yin deficiency.
I can personally stare at this lotus root for quite some time :)
